No-Bake #mamapower bars

I absolutely LOVE the change of seasons and getting the chance to experiment in the kitchen with local ingredients. I also really work hard to develop recipes for our #washies that take no more than about the 30 minutes we all have to spare in between loads of laundry and carpool.  I developed these delicious bars to power you through the fall soccer practices and transition to early mornings for school. 
INGREDIENTS
1 cup of grass-fed butter 
3 cups of quick cooking oats
1 cup of organic semisweet chocolate
1/4 cup chopped dried apricots
1/2 cup of either peanut, sun, almond, or cashew butter
1/2 cup of organic light brown sugar (packed)
1 teaspoon of organic vanilla extract
1 teaspoon organic cherry extract
1 teaspoon of local honey
*feel free to make substitutions as needed based on personal dietary needs
PREP TIME (30 minutes)
  1. Grease a 9x9 inch square pan.
  2. Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla, cherry, and honey. Mix in the oats, seeds, apricots. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
  3. Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
  4. Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars. I also like to use a muffin pan so the kiddos can grab after school.
